A homemade recipe for fluffy strawberry marshmallows, made with fresh strawberries, gelatin, sugar syrup, and coated in a strawberry-flavored powdered sugar mixture.
1. Blend 1/2 lb strawberries with 1 tbsp sugar and 1/2 cup water. Strain the mixture to remove solids.
2. In the strained strawberry mixture, bloom 3 packets of unflavored gelatin.
3. In a separate saucepan, combine 1.5 cups sugar, 1 cup light corn syrup, and 1/2 cup water. Bring this mixture to 240°F (115°C).
4. Carefully and slowly pour the hot sugar syrup into the strawberry gelatin mixture while whipping.
5. Continue to whip the mixture until it is pale and fluffy, which should take about 8-10 minutes.
6. Pour the whipped marshmallow mixture into a buttered 8x8 inch pan.
7. Let the marshmallows cool and set for a minimum of 6 hours.
8. In a separate bowl, whisk together 1/2 cup powdered sugar, 1/4 cup strawberry powder, and 2 tbsp corn starch. Red food dye can be added for optional color.
9. Once cooled and set, cut the marshmallows and dust generously with the powdered sugar mixture.
